I'm Lainey, the heart behind SimplyBakings.com! What started as a personal love for baking has grown into a thriving community where I celebrate Filipino cooking with a fresh, plant-based approach. My mission is to redefine Filipino cuisine by making it more accessible to those exploring a vegetarian lifestyle—one delicious recipe at a time.
Background & Expertise
Food has always been a big part of my life—just ask my mom! She loves to remind me of how, as a kid, I’d tell her to save food from parties because it tasted so good (Filipinos, you know what I’m talking about—baon is a must!). While I developed a love for baking in my teens, I also grew up eating predominantly pescatarian, since my family didn’t eat pork, fish without scales, or seafood other than fish. Because of that, transitioning to a vegetarian lifestyle felt natural.
Now, with nearly 20 years as a vegetarian and over eight years of cooking plant-based meals daily for my spouse, I’ve learned to create flavorful, satisfying dishes that honor my Filipino heritage. Along the way, I’ve had the privilege of learning from some of the best Filipino vegan and vegetarian cooks, refining my skills, and deepening my passion for plant-based Filipino cuisine.
Innovation and Creativity
Since I grew up in a faith that encouraged a vegetarian diet, plant-based cooking has always been a big part of my life. This background has helped me become a leader in reimagining classic Filipino dishes in a new way. From vegan adobo to meatless sinigang, I focus on keeping the flavors and traditions alive while making them plant-based. My goal is to show that Filipino food can be just as delicious without meat and to inspire others to try new ways of cooking.
Future Vision
I'm so excited about the future of SimplyBakings.com! My goal is to make it the go-to place for delicious vegan, vegetarian, and Filipino-inspired recipes. I want to keep creating new recipes, working with others who share my passion, and sharing helpful tips to make plant-based cooking easy and fun. More than anything, I hope to inspire more home cooks to try plant-based Filipino food and see just how tasty and satisfying it can be!

Tried your coffee cake recipe. You indicated to use a "cake pan." So I used a round "cake pan." I ended up with a mess on the bottom of my oven and a coffee cake that was raw in the middle. Sweetie, you need to indicate the size of the pan. Next time I will use 2 round cake pans. (Very disappointed.)

Are you kidding me? Did anyone test the recipe for Rice Krispies Cookies? I followed the recipe exactly, rolled them into 1" balls 12 to a cookie sheet, and they baked into a disaster, spreading out over the entire cookie sheet! My grandchildren are coming tomorrow for Christmas at Nana's, and I'm embarrassed to serve these to them. I would send you a photo if I could. Also, the marshmallows melted completely, so there is pure browned sugar around each edge. And, you can't tell that there are Rice Krispies in them, even though I used the rainbow-colored ones. Please remove me from your email list. I won't take a chance on your recipes again.
